BREAKFAST ON THE GO – FAST & HEALTHY

Breakfast – Most important meal of the day?

But mornings can often be a bit fraught, at least in my house, as we try to get out of the door on time so generally breakfast for the kids is some cereal thrown in a bowl with milk splashed on top and thats the lot.  I occasionally take the time to read the ingredients on the cereal box, and every time I do I vow to find healthier and more varied options for breakfast foods.  But, inevitably, even with the best of intentions, I still end up buying the sweet, sugary breakfast foods that profess to be healthy, fortified and full of vitamins – however, they fail mention that usually at least (at least!) around 20% of the contents is SUGAR – shocking I think!

The guilt each morning was getting to me, so I set myself a task recently (cos obviously don’t have enough to do), to find some easy, quick breakfast on the go options that I can prepare in advance, that don’t require the incorporation of processed ingredients and loads of sugar.

Here are my top 5 – breakfasts that can be batch made, frozen and got out the night before/morning of (I will warn you, American measurements are used (cups, rather than grams/ounces)– invest in buying some cup measurers rather than scales – is quicker and easier – all supermarkets sell them nowadays)

  1. BANANA PANCAKES

INGREDIENTS

  • 2 cups whole-wheat flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt
  • 1 tablespoon honey
  • 2 large eggs, lightly beaten
  • 1 ¾ cups milk
  • 2 tablespoons butter, melted + butter for frying
  • 2 ripe bananas, mashed
  • 100% pure maple syrup for serving

INSTRUCTIONS

  1. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  2. Make a well (hole) in the centre of the flour mixture and pour in the honey, eggs, milk, and 2 tablespoons of melted butter. Whisk together thoroughly, but do not overmix.
  3. Gently fold the mashed bananas into the batter with a spatula.
  4. Heat a frying pan with a bit of butter (or I suppose oil if you prefer) over a medium-high heat. Add pancake mix
  5. When the pancakes have begun brown on the bottom, flip them over to cook the other side.
  6. Serve with warm maple syrup and some fruit.

These can be frozen, just put a piece of greaseproof paper between each one, put in a plastic bag and freeze.  Takes just 30 secs to re-heat in a microwave or a minute in a frying pan.

  1. WHOLEWHEAT WAFFLES

I haven’t tried these yet, but I love waffles so am investing in a waffle iron – can’t wait

INGREDIENTS

  • 2 large eggs
  • 1 ¾ cups milk (Skimmed, Semi or Whole Milk – which ever you prefer)
  • ¼ cup oil(I use melted butter – just my preference)
  • 1 tablespoon honey
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
  • 1 ½ cups whole-wheat flour
  • 2 teaspoons baking powder
  • ⅛ teaspoon salt
  • Warmed 100% pure maple syrup for serving
  • Fresh fruit for serving

INSTRUCTIONS

  1. Preheat your waffle iron.
  2. In a large mixing bowl whisk together the eggs, milk, oil, honey, cinnamon, and baking soda until well combined.
  3. Add in the flour, baking powder, and salt and whisk together just until the large lumps disappear.
  4. When the waffle iron is hot, dab it with a little butter and then ladle some batter onto the centre of the iron. Follow the instructions that came with your waffle maker to know how long it should be cooked (mine takes about 3 – 4 minutes each).
  5. Keep waffles warm until you finish cooking all of them. Top with pure maple syrup and fruit. Enjoy!

Apparantly they freeze really well, and re-heat in minutes either in the microwave or frying pan.  They can be great to be given as a snack, or can be eaten on route to where ever you are rushing out to in a morning.

  1. BREAKFAST COOKIES

INGREDIENTS

  • 1 cup whole-wheat flour
  • ¾ cup rolled oats
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup applesauce (make it yourself – go on, its easy)
  • 3 tablespoons maple syrup
  • 2 tablespoons butter, softened but not melted
  • 1 egg
  • ½ teaspoon vanilla
  • ½ cup chopped pecans (or if you don’t want to use nuts – try pumpkin seeds instead0

INSTRUCTIONS

  1. Preheat oven to 375 degrees F and grease a baking sheet.
  2. Mix together the flour, oats, baking soda, and salt.
  3. In a separate bowl using an electric mixer beat the applesauce, maple syrup, butter, egg, and vanilla.
  4. While beating the mixture on a low speed add the dry ingredients until well blended.
  5. Fold in the nuts with a spatula.
  6. Drop spoonfuls of the mixture onto baking sheet with a spoon. Bake for 8 – 9 minutes or until they start to brown

Adding a teaspoon of cinnamon to these makes them really yummy too.

  1. FRUIT MUFFINS

INGREDIENTS

  • 1½ cups whole-wheat flour
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 2 eggs
  • 2 tablespoons honey
  • 1 teaspoon pure vanilla extract
  • ¼ cupoil
  • ¾ cup orange juice or apple juice
  • About 1 cup of total filling (berries, fruit, nuts, etc. – see below for details)
  • Muffin/Cupcake liners

INSTRUCTIONS

  1. Heat oven to 400 degrees F.
  2. In a large bowl with a fork or whisk mix the flour, salt, baking powder, cinnamon and nutmeg.
  3. Make a hole in the center of the flour mixture and pour in the eggs, honey, vanilla, oil and orange juice. Mix the dry and wet ingredients together – do not overmix.
  4. Just add 1 cup of blueberries, mashed up banana & nuts, or other filling of your choice
  5. Line a bun tin with cases fill ⅔ to ¾ of the way full with batter.
  6. Slide the tray into the warm oven and bake for 10 – 15 minutes or until a toothpick comes out clean. Serve warm or at room temperature and freeze some for a later date.

  1. WHOLE WHEAT BANANA BREAD

INGREDIENTS

  • 2 ¼ cup whole-wheat flour
  • ¾ teaspoon baking soda
  • ¼ teaspoon salt
  • 3 ripe bananas, mashed
  • ¼ cup plain yogurt
  • ¼ cup honey
  • 2 eggs
  • ⅓ cupoil
  • 1 teaspoon vanilla

INSTRUCTIONS

  1. Preheat oven to 350 degrees F and grease pan.
  2. Whisk together the flour, baking soda, and salt.
  3. In a separate bowl mix mashed bananas with yogurt, honey, eggs, oil, and vanilla.
  4. Fold the banana mixture into the flour mixture until blended. Do not overmix.
  5. Pour batter into prepared pan.
  6. Bake large loaf for 40 – 50 minutes or until it comes clean with a toothpick

You can make these in muffins or small loaves too.
